I do, using dehydrators, I know some peoples use ovens. My dehydrators (3) are 14 inches in diameter with 5 trays. Depending on how much meat I start out with, 2-3lbs, I only need one dehydrator. 7lbs takes 2 dehydrators, but I havent done enough to need my 3rd dehydrator yet.

I have two recipes that I use with either Lean Chuck or Eye of Round Beef, making sure the beef hunks are low in fat content. Put the meat in the freezer and let it freeze until it starts to get hard, this makes for easier slicing. Slices should be no more than a 1/4" thick. TB Spoon addings are heaping scoops.

1. For a more salty and spicy taste. Mix is for 2.5lbs of meat.
3/4 cup Worcestershire Sauce
3/4 cup Soy Sauce
1/2 cup Jack Daniels Honey Smoke House BBQ Sauce
2 TB Spoon Fajita Seasoning
1 TB Spoon KC Masterpiece BBQ Seasoning
1 TB Spoon Garlic Powder
1 TB Spoon Onion Powder
3 TB Spoon Brown Sugar
1 TB Spoon non heaping Cayenne Pepper

2. Less salty, smoky flavor. Mix is for 2.5lbs of meat.
1/2 Cup Soy Sauce
1/2 Cup Teriyaki Sauce
1/2 Cup Liquid Smoke
4 TB Spoon Brown Sugar
1 TS Spoon Fajita Season
2 TS Spoon KC Masterpiece BBQ Season (Heaping)
2 TS Spoon Onion Powder (Heaping)
2 TS Spoon Garlic Powder (Heaping)

Whip yourself up a batch if you'd like, makes for a really good addictive snack.

Man I am a beef jerky nut, I have never made my own though. Guess I need to get me a dehydrator lol. But i guess im kinda spoiled, We have a beef jerky outlet here in town with a whole bunch of flavors

Boomer, my wife uses her dehydrators on her garden veggies and we always wanted to try making some jerky. Sometime soon I'm going to slice some thin top round steaks( good lean meat) and bring them home and use your recipes. Thanks!!

My wife used to make it when I was big into power lifting. It was a high protein snack and fairly cheap. Everybit helped when I was taking in 300 grams of protein a day. She had a good recipe figured out but stopped making it after I stopped lifting and doing competitions

Man you are making me jealous, I can hardly resist eating it all right off the dehydrator. Just let me know how to get to your place when you have a free weekend so we can go check out that shop together.

Oh you're going to love it. The best thing to do is get your meat sliced on a machine 1/8th inch thick, if you cant then do like I mentioned above. For the seasoning mix, mix it in a big bowl first and taste it. My #1 recipe is a bit salty for some and I would suggest going easy at first because a lot of the parts of that mix are salty. Once you have the seasoning mix like you want it, then mix the meat in the bowl for about a minute so everything gets throughly coated and then dump the whole mix in a gallon zip lock bag. Put the bag in the fridge and pat it down flat. I suggest flipping the bag over half way through the night. In the morn its time to put the meat on the dehydrator. Dip each piece in some of the liquid mix so it lightly sopping wet and then put in on the trays, this adds for lots of extra flavor. Now, you'll need to be watching it, if the climate where you are at has been wet, it will take longer. If its been dry, then it takes less time to dehydrate. Its important to watch it, because if you leave the pieces on too long they will start to kinda burn and it can ruin the flavor. Best time to take it up is when it looks dry, test bend and tare pieces to see if they are tough and rip when torn and that way you can see if the meat is dry, look for little white fibers thats a good sign. Taste test samples, you can judge its progress by chewing. Just watch the color of the meat if it starts getting almost black its time to take it up. Leave it in an open container or ziplock bag to cool before sealing up. The best way to eat it is with a super cold glass of Dr. Pepper or Barqs Rootbeer. Good luck, enjoy.

Ask her if you can post up her recipe, I might have to give it a try.

Yeah man that sounds like a plan, might be a hell of a trip for some jerky though lol. They have a website its www.dojerky.com and I'm pretty sure you can order anything they sell from the website. They carry all sorts of stuff from beef to salmon jerky, hot sauces, fried peanuts, cheese spread, pre-mixed jerky seasoning, dang near anything you could want

Holy Crap, I would go broke in that store! I dont even wanna look anymore cause I can just see my monies floating away.

Yeah I know what ya mean, I go there about twice a month and I can't get out of there without spending at least 50 dollars
